Preheat oven to 220°C/200°C fan-forced. Grease and line base of a 3cm-deep, 24.5 x 37.5cm (base measurement) oven tray with baking paper.
Put buttermilk, eggs, vanilla extract and banana in a large bowl and whisk until combined.
Put flour, sugar, baking powder and bicarbonate soda in a large bowl and whisk to combine. Add buttermilk mixture and half of the melted butter and fold until just combined.
Scatter with frozen berries and bake for 20 minutes, or until pancake is lightly golden and springs back when touched. Brush with remaining butter and return to oven for 5 minutes.
Serve sliced with mascarpone, berries, extra banana, maple syrup and dusted with icing sugar.
