 Preheat oven to 180°C/160°C fan forced. Grease and line a 24 x 11cm (10cm-deep) loaf pan with baking paper, leaving 2cm overhang. Combine tea and water in a bowl. Set aside to infuse.
Meanwhile, using an electric mixer, beat butter, sugar, lemon zest and vanilla in a bowl for 10 minutes or until pale and creamy.
Add eggs, one at a time, beating well after each addition. Add yoghurt and beat until well combined. Fold in flour and salt. Stir in tea mixture and passionfruit until just combined.Â
Spoon into prepared pan and smooth surface. Bake for 1 hour or until a skewer inserted into the centre comes out clean.
For Passionfruit syrup, bring lemon juice, water and tea to a simmer in a small saucepan on medium. Cook for 1 minute. Strain into a clean saucepan, discarding solids. Add passionfruit and sugar. Cook on medium until mixture comes to the boil. Reduce heat to low. Cook for 8-10 minutes or until syrupy. Set aside to cool slightly.Â
Spoon 2 tablespoons syrup over cake. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely. Drizzle with remaining syrup. Serve with cream and extra passionfruit.
