2/3 cup plain flour
2 Tbsp custard powder
¼ tsp ground nutmeg
½ cup brown sugar
½ cup skim milk
200g tub low-fat vanilla yoghurt
4 egg whites
1 tsp vanilla extract
400g can peach slices, drained
Vanilla sugar, to serve
Preheat oven to moderately hot, 190°C. Spray a 23cm round baking dish with oil.
Sift flour, custard powder and nutmeg into a bowl. Stir in sugar.
In a jug, whisk milk, yoghurt, egg whites and vanilla together. Beat into flour until smooth. Pour into pan.
Arrange peaches over batter in dish. Bake 40-45 mins until firm, puffed and lightly golden. Sprinkle with vanilla sugar.
