Peach clafoutis

Serve with ice-cream for a sweet dessert treat. - by Sarah Murphy

Peach clafoutis
Prep: 15 Minutes - Cook: 45 Minutes - Serves 4-6

It doesn't take long to prepare this traditional French dessert. You can also substitute the canned peach slices for any other fruit you can think of!

Ingredients

2/3 cup plain flour

2 Tbsp custard powder

¼ tsp ground nutmeg

½ cup brown sugar

½ cup skim milk

200g tub low-fat vanilla yoghurt

4 egg whites

1 tsp vanilla extract

400g can peach slices, drained

Vanilla sugar, to serve

Method

  1. Preheat oven to moderately hot, 190°C. Spray a 23cm round baking dish with oil. 

  2. Sift flour, custard powder and nutmeg into a bowl. Stir in sugar. 

  3. In a jug, whisk milk, yoghurt, egg whites and vanilla together. Beat into flour until smooth. Pour into pan. 

  4. Arrange peaches over batter in dish. Bake 40-45 mins until firm, puffed and lightly golden. Sprinkle with vanilla sugar.
