Do you use a knife and fork to cut it up daintily? Or do you fold it up like a wallet and wolf it down whole? That’s the question tying pizza enthusiasts in knots.
One expert has weighed in on the debate, explaining that it all comes down to how soft the pizza is.
According to Stefano Cirene, owner and executive chef of Verace Pizzera in Sydney, you shouldn’t use a knife and fork.
“Basically you need to pinch the edge of the pizza, the left and right sides should touch – and it must be soft — that is the rule of the pizza Napoletana — it must never be crunchy.”
Mr Cirene should know. His restaurant won Australia’s Best Pizza in the 2017 Pizza World Championships in Parma, Italy.
“It was a street food to be eaten on the go, almost like a sandwich or portafoglio (meaning wallet),” he told News.com.au.
“They would fold it, then fold it in half again, like a crepe.”
