2. There is a simple way to line a springform tin. Separate the side and base, cover the base with  a large square of baking paper, then replace the side and secure the clasp. Line the side with a strip of paper cut to fit so it extends 2cm above the tin.

3. Buy cream cheese in blocks, not in tubs. Leave a block at room temperature for at least 15 minutes to help soften the cheese. By softening, you will be able to beat it with ease, which means no lumps!

4. Granita biscuits have a great crumbly texture and rich nutty flavour, which pairs beautifully with the mango. If you’re feeling adventurous, you can mix up the biscuits used in the base.
