RACHEL’S PUMPKIN PIE RECIPE Ingredients

2 eggs

  • 1 egg yolk

  • 1/2 cup brown sugar

  • 1/3 cup white sugar

  • 1/2 teaspoon salt

  • 2 teaspoons cinnamon

  • 1 teaspoon ground ginger

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

  • 1/8 teaspoon ground cardamom

  • 1/2 teaspoon lemon zest

  • 2 tablespoons of maple syrup

  • 2 cups puréed cooked butternut squash

  • 1 1/2 cup cream

  • 1 pie crust

Method

1 Preheat oven to 220° Celsius
2 Beat eggs and egg yolk together then mix in sugar, salt, spices, lemon zest and maple syrup
3 Mix in pumpkin and cream. Beat together until well mixed
4 Pour into pie crust and bake for 15 minutes. After 15 minutes, lower temperature to 180
° Celsius and bake for further 45-55 minutes.
5 Cool on rack for 2 hours before serving
