Ingredients
2 Tbsp olive oil
2 onions, chopped
4 garlic cloves, crushed
4 ripe tomatoes, chopped
1 cup water
500g chicken mince
60g bag baby spinach
½ cup basil leaves
200g fresh ricotta
5 lasagne sheets, halved
1 cup grated tasty cheese
¼ grated parmesan
Method

Heat oil on medium. Sauté half each onion and garlic 2-3 minutes. Stir in tomatoes and water. Simmer 15-20 minutes until reduced. Season.

Heat remaining oil on high. Sauté remaining onion and garlic 2-3 minutes. Add mince and brown 2-3 minutes.

Add spinach and basil. Cool. Stir ricotta through. Lightly grease an 8-cup baking dish.

Spread 1/2 cup chicken mixture onto each pasta sheet, rolling to enclose. Place seam-side down in baking dish. Spoon tomato sauce over. Sprinkle with cheeses.

Bake 200C 35-40 minutes. Serve scattered with extra basil leaves.
