But if you ask Fast Ed, there’s a humble root vegetable that outshines them all: the sweet potato! This week, Fast Ed’s meeting some farmers who have made growing sweet potatoes their speciality. And he’s putting their produce to good use in a melt-in-your mouth dessert, sweet potato pie. With cinnamon, lemon and honey, this pie is way easier than most because no pastry is involved…but even without the pastry, it’s definitely just as delicious.
