Ingredients: 450g Italian-style sausages; 2 Tbsp extra virgin olive oil; 2 cloves garlic, crushed; 1 tsp sweet paprika; 1/2 tsp nutmeg; 1 1/2 Tbsp firmly packed fresh oregano leaves, plus extra to serve; 450g jar roasted capsicum, drained, thinly sliced; 400g jar passata; 400g can cherry tomatoes; 2 cups chicken stock; 2 1/2 cups dried orecchiette; 1 cup finely grated parmesan, plus extra to serve; Sea-salt flakes and freshly ground black pepper, to season

Ingredients

450g Italian-style sausages

2 Tbsp extra virgin olive oil

2 cloves garlic, crushed

1 tsp sweet paprika

1/2 tsp nutmeg

1 1/2 Tbsp firmly packed fresh oregano leaves, plus extra to serve

450g jar roasted capsicum, drained, thinly sliced

400g jar passata

400g can cherry tomatoes

2 cups chicken stock

2 1/2 cups dried orecchiette

1 cup finely grated parmesan, plus extra to serve

Sea-salt flakes and freshly ground black pepper, to season

Method

Step 1

Squeeze out the sausage meat and roll into heaped teaspoon-sized balls. Heat oil in a large saucepan on medium heat. Add meatballs and cook for 3–4 minutes, stirring, or until browned all over. Add garlic, paprika, nutmeg and oregano. Cook for 1 minute or until fragrant.

Step 2

Add capsicum, passata, tomatoes, stock and dried pasta, then bring to a simmer. Cover and reduce heat to low, cook for 15 minutes. Remove lid and cook for a further 5 minutes or until pasta is cooked and sauce has reduced slightly.

Step 3

Stir in parmesan. Season to taste. Serve pasta with extra parmesan and oregano.
