Looking for the perfect summer sandwich recipe? These sweet, salty and fresh prosciutto, pesto and peach sandwiches are bursting with summer flavours with every bite. And with a generous layer of homemade chilli honey ricotta, you’ll be licking your fingers (and the bowl) before the kids ask, “What’s for lunch?”

To make the chilli honey ricotta, combine all ingredients in a bowl. Season to taste.
Cut Turkish bread crossways into four equal portions, then cut each portion in half horizontally.
Spread the bases with chilli ricotta and the top sections with pesto. Top the ricotta with rocket, prosciutto, peaches and basil leaves. Drizzle with honey. Sandwich with the tops, pesto-side down.
For a change, toast the Turkish bread under the grill before assembling. If you don’t like chilli, switch the hot honey for regular honey and omit the chilli flakes. Turkish bread can be replaced with focaccia or sourdough, if you prefer.
