Use fresh summer flavours from peach, basil and fennel to brighten up your Christmas ham. Instead of serving it just straight off the bone, grill it up and make a ham and peach salad that is full of festive flavour.
The best part is, of course, the glaze! Honey, mustard and chilli make for a sticky, sweet and absolutely scrumptious topping to your fresh salad.

For the glaze, whisk ingredients in a bowl until smooth.
Heat a frying pan or grill plate on medium heat. Dip ham in glaze and cook 2–3 minutes each side. Remove.
Cook peach quarters in same pan or grill plate, turning regularly, until light golden but not soft. Remove.
Wipe pan or plate clean. To make croutons, cook bread for 2 minutes each side, until golden.
Serve ham and peaches with combined salad ingredients. Spoon over remaining glaze. Scatter with croutons.
