This version has nuts, so if you or your littlies can’t enjoy them, there’s a nut-free version here.

Put dates and juice in a small saucepan over a high heat. Bring to the boil, then simmer for 5 minutes or until dates are just soft. Remove from heat, then set aside for 20 minutes to cool completely.
Put chia seeds, cocoa and 1 cup of the cashews in the bowl of a food processor and process until finely chopped. Add date mixture and remaining cashews, then process until just combined. Refrigerate for 15 minutes or until firmed up slightly.
Roll mixture into balls, using 2 tsp of mixture for each. (An easy way to roll the right size is to measure out 1 Tbsp of mixture, then halve it.) Roll balls in either coconut or extra cocoa. Package in airtight containers and store in the fridge until ready to serve or adding to lunch boxes.
Tip These bites are great in lunch boxes, just don’t forget to pop in
a mini icepack to keep them cool.
