Everyone loves damper… but a good damper recipe is so hard to find! This week, Fast Ed’s sharing how to make damper. With loads of added flavour from the browned butter – plus cheese for good measure – this damper has the most amazing texture and smells as good as it tastes.

Preheat oven to 180°C fan-forced (200°C conventional). Grease and line a 22cm round springform cake pan with baking paper.
Melt butter in a large frying pan on medium heat, cook, stirring occasionally for 3 minutes until butter is golden brown. Add oats, cook for 3 minutes, until golden. Remove from heat, stir in water. Put oat mixture in a bowl, set aside to cool completely.
Melt extra butter in same pan on medium heat. Cook onion for 3 minutes until soft, stir into oat mixture. Set aside to cool for 15 minutes.
Sift self-raising flour, baking powder and bicarb in a bowl, then stir in wholemeal flour and salt. Gently mix in oat mixture and tasty cheese. Divide into 7 pieces and roll each into a ball, arrange in lined pan. Set aside for 15 minutes, then brush with a little water and scatter with parmesan and chives.
Bake for 20 minutes, then cover with foil and bake for a further 10 minutes until rolls are golden. Cool damper slightly on wire rack. Serve with antipasti.
