Preheat oven to 180C. Line a 26 x 16cm slice tin with baking paper. Crumble Weet-Bix into a large mixing bowl. Add flour, sugar, coconut and chocolate and stir to combine.Â
Melt butter, add to Weet-Bix mixture and stir to combine. Press mixture into prepared tin and bake for 20-25 minutes. Stand on a wire rack to cool. Melt chocolate over a bowl of simmering water. Stir till smooth, cool slightly and spread over slice. Leave for an hour or until chocolate is firm. Cut into squares to serve.Â
Cook’s Tips! Try any wholegrain breakfast cereal in place of Weet-Bix, such as oat flakes. Better yet, mix them all together!
