Chocolate Cornflake Slice

A classic for morning or afternoon tea.

Chocolate cornflake slice is one of those morning or afternoon tea treats that can evoke all kinds of nice memories. It’s also super easy to make and sure to please people of every age. In this recipe, a dark chocolate base kicks off this crunchy slice, which also includes a dash of coconut just for fun.

Preheat oven to 180C. Line a 26 x 16cm slice tin with baking paper. Sift flour and cocoa into a large mixing bowl, add cornflakes, coconut, sugar and 100g of the chocolate, and stir to combine.

Make a well in centre of dry ingredients, add butter and vanilla and stir to combine. Put cornflake mixture in tin and press down with the back of a spoon.

Bake for 20-25 minutes or until golden and crisp. Remove from oven and stand on a wire rack. Melt remaining chocolate and spread on top of slice to edges of tin. Stand for 1 hour or until chocolate is set. Cut into squares or fingers and serve. 

Cook’s tip

If you want to make this more of an an after-eight treat, add a dash of your favourite liqueur, such as Grand Marnier or a splash of rum or port, to the chocolate as you melt it. Bottoms up! 

Can you buy chocolate cornflakes?

While you might be able to find seasonal or specialised cereal brands that offer chocolate-flavoured cornflakes, you’re much more likely to get plain or simply sweetened cornflake varieties in Australia. And when it comes to recipes, including this chocolate cornflake slice, it’s actually better to use plain cornflakes to avoid an overpowering flavour.
