Rose petal melting moments

Melting moments are a classic, well-loved recipe so when they’re infused with rose petals, it becomes the perfect sweet treat to show loved ones how much you value them.

They’re perfect for Mother’s Day or a simple act of kindness.

Ingredients

Buttercream
Drippy ice cream

Method

Step 1

Preheat oven to 200°C/180°C fan-forced. Line a large oven tray with baking paper and set aside. Place butter, icing sugar mixture and vanilla in the bowl of an electric mixer and beat for 5–6 minutes, until light and fluffy. Add flour and custard powder. Beat until a smooth dough forms. 

Step 2

Roll dough out between two sheets of baking paper until 1/2 cm thick. Refrigerate for 20 minutes.

Step 3

Use a 5 1/2 cm round cookie cutter to cut out dough, re-rolling dough as needed. Arrange on baking tray, bake 10–12 minutes, or until lightly golden around edges. Set aside to cool.

Step 4

To make buttercream, place butter, icing sugar mixture, rosewater and food colouring in an electric mixer and beat for 8 minutes, until light and creamy. Place in a piping bag fitted with a 1cm star nozzle. Pipe buttercream on the underside of half the biscuits. Sandwich with remaining biscuits. Refrigerate for 15 minutes.

Step 5

For drippy icing, mix icing sugar and lemon juice in a bowl until smooth. Spoon onto the tops of the biscuits and sprinkle with rose petals. Refrigerate for 10 minutes to set.

What is a melting moment?

A melting moment is traditionally two shortbread biscuits sandwiched with a lemon buttercream filling. However, there are a wide variety of flavours for the fillings, such as this beryy, and chocolate oat filling.

What’s the difference between a melting moment and a yo-yo?

The difference between a melting moment and a yo-yo is in the filling. A melting moment has icing sugar and cornflour added to the dry mix while a yo-yo has custard powder to give them their own unique yummy flavour.

Why do my melting moments go flat?

If your melting moments are coming out of the oven flat, it could be because the temperature is too hot. If it’s too hot, the butter melts too quickly, not giving the other ingredients enough time to firm up into a cookie structure. Try lowering the temperature and see if that helps!
