Put oil and butter in a large non-stick frying pan over a medium heat. Crack eggs into individual small bowls or cups.
When butter is bubbling, add an egg to pan.
Add second egg to pan.
For runny yolk sunny-side up, cook eggs for about 1 minute or until eggwhite is opaque and yolk is just set on the outside (see above for other methods).
Using a spatula, remove eggs from pan. Transfer to a plate lined with paper towel to drain excess oil. Repeat Steps 2-4 for remaining eggs. Serve.
