Firmly roll a lemon between your hands, then on a hard surface – such as a bench top – until the inside of the fruit feels soft. Take a food skewer and pierce the lemon through the top nodule, pushing it to the middle of the fruit. Then, all you have to do is squeeze and a stream of lemon juice should flow freely from the hole in the top of the lemon.
