If you happen to be building or renovating a kitchen, one of the biggest and most expensive decisions you’ll have to make it what kind of cooktop to install. Electric, induction or gas varieties each have their pros and cons, but which is best for you? We asked professional chef and Electrolux Ambassador Richard Ousby how to make the choice between an induction or gas cooktop.
Induction Cooktop
What kind of cooking is an induction cooktop best for?
“If you want super-accurate cooking, induction is for you. Once you work out the setting and time required for something to cook, all you need to do is save this setting for next time. Plus, there are so many induction recipes online now, so there is a world of opportunity at your fingertips.”
Who is this cooktop best for?
“I think induction is the perfect addition to any modern kitchen. Induction cooktops are especially handy if you live in an apartment, because they become multi-purposed. When you’re not using your induction cooktop, you can simply use the surface as extra bench space. I live in a 100-year-old wooden Queenslander and my Electrolux induction cooktop fits seamlessly into my kitchen.”

Gas Cooktop
What kind of cooking is a gas cooktop best for?
“When I was training to be a chef, I cooked on gas cooktops. There is a certain level of mastering the flame when cooking on gas, which can be difficult in the beginning but is very rewarding when done right.”
Who is this cooktop best for?
“I still love to cook traditional dishes on gas. There is something about the flame that reminds me of when I started cooking, so it’s quite nostalgic for me. This cooktop is best for the home cook that loves to experiment.”
