Ingredients
1 egg white
2 egg yolks
¼ cup caster sugar
1⅔ cups shredded coconut
Method

Preheat oven to 130C fan-forced (150°C conventional). Grease and line two oven trays with baking paper.

Whisk egg yolks with sugar in a small bowl until thick and creamy, then stir in coconut.

Beat egg white in a small bowl with a whisk until firm peaks form (you could also use a hand held electric mixer). Then gently stir into coconut mixture.

Drop heaped teaspoons of the mixture onto oven trays.

Bake 15 minutes. Reduce oven to 100C fan-forced (120°C conventional). Bake for a further 15 minutes or until browned lightly. Cool on trays.
