Ingredients
625g desiree potatoes, peeled, grated
1 cup broccoli, finely chopped
2 thin sausages of choice, thinly sliced
2 eggs, lightly beaten
½ cup grated parmesan cheese
¼ cup self raising flour
1 seeded long red chilli finely chopped, plus extra to serve.
2 tbsp olive oil
20g butter
Method

Squeeze excess moisture from potato. Transfer to a bowl with broccoli, sausage, eggs, parmesan, flour and chilli. Mix well and season to taste.

Press ⅓ cups of mixture firmly into 8 rounds.

In a large frying pan, heat combined oil and butter on medium. Working in two batches, add fritters to pan, flattening slightly. Cook 3-4 minutes each side, until crisp and golden.

Serve warm or cold, with extra chilli.
