Ingredients
2 cups brown rice, cooked (see tip)
1 cup dried breadcrumbs
4 eggs lightly beaten
2 bacon rashers, cooked, chopped
½ seeded red capsicum, finely chopped
2 green onions thinly sliced, plus extra to serve
1 tbsp soy sauce
1 tbsp coriander, chopped
2 tbsp vegetable oil
Kecap manis (sweet soy sauce), to drizzle
Method

In a large bowl, combine rice, breadcrumbs, eggs, bacon, capsicum, onion, soy and coriander. Mix well.

In a large frying pan, heat oil on medium. Working in two batches, add quarter-cups of mixture to the pan, plattening slightly. Cook 2-3 minutes each side, until golden. Drain on paper towel.

Serve drizzled with kecap manis and sprinkle with extra onion.
