Packed with crispy bacon, melted cheese and fragrant herbs, these savoury scones are guaranteed to be a crowd-pleaser. Golden on the outside and soft and fluffy in the centre, they’re perfect for lunchboxes, picnics, brunches or serving alongside a bowl of soup. Easy to make and even easier to devour, these cheesy bacon scones are best enjoyed fresh from the oven with a generous spread of butter.

Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.
Cook bacon in a frying pan on medium heat for 5 minutes, until lightly browned. Remove and drain on a plate lined with paper towel.
Follow steps 1 and 2 of the classic scones recipe, adding bacon, cheeses, parsley and thyme at the end of step 1.
Use the palm of your hand to press dough into a 20cm round. Brush with egg and sprinkle with the extra tasty cheese and thyme.
Using a lightly floured knife, cut dough into 12 wedges. Place on the prepared tray about 2cm apart.
Bake for 15–20 minutes or until golden and the scones sound hollow when tapped. Transfer to a wire rack to cool slightly. Serve with butter. These are best eaten on the day of baking.
