How to make watermleon, pomegranate and feta salad
Ingredients
1/4 watermelon, cut into wedges
100g marinated feta in oil, drained, oil reserved
4 green figs, halved or quartered
1 pomegranate, seeds removed
1/2 bunch mint, leaves picked
2 Tbsp pomegranate molasses
Murray River Sea-salt flakes and freshly ground black pepper, to season
Method

Arrange watermelon, drained feta, figs, pomegranate seeds and mint on a platter.

Combine pomegranate molasses and 1 tablespoon of the reserved feta oil in a bowl, and whisk to combine. Season, then drizzle dressing over salad and serve.
