Syrupy orange sugar-free cake

This intensely orange-flavoured cake is the perfect starting point for you to try healthier baking.

Method

1.

Combine chia seeds and coconut milk in a medium bowl, then set aside for 3 hours.

Finely grate the zest of 4 of the oranges into a medium saucepan, then add juice of all 8 oranges. Set over a medium heat and bring to a simmer. Simmer for 30 minutes or until juice has reduced by three-quarters. Set aside for 30 minutes to cool.

Preheat oven to 180°C. Grease a 24 x 12cm medium loaf tin with cooking oil spray, then line base and sides with baking paper.

Whisk together eggs, stevia, orange syrup and chia seed mixture in a large bowl. Beat in almond meal, then sift in flour and baking powder. Stir thoroughly, then spoon into prepared tin. Bake for 30 minutes or until cooked when tested with a skewer. Transfer to a wire rack to cool. Slice and serve with yoghurt.
