What’s not to love about an impossible pie? All you need to do is mix the ingredients, pour them into a dish and pop it in the oven. Now this is where the magic happens – and where the pie gets its name. The pie seemingly does the impossible, separating itself into layers to create a crust with a delicious custardy filling.

Preheat oven to 180C. Grease a 24cm pie dish.
Combine sifted plain flour, sugar, coconut, eggs, vanilla, butter and half the almonds in a large bowl. Gradually add milk, stirring, until combined. Pour mixture into dish.
Bake pie 30 mins. Remove from oven, sprinkle with remaining almonds and bake a further 15 minutes or until pie has browned lightly and set.
Serve pie topped with fresh passionfruit pulp, blackberries and blueberries.
