Healthy Christmas pudding ice-cream

Frozen banana and leftover Chrissie cake (or pud) are the secret ingredients in this sweet treat that’s perfect for a post-Christmas cool down.

Ingredients

Method

1.

Remove bananas from freezer and set aside for 5 minutes.

2.

Chop bananas and put in the bowl of a food processor. Process until almost smooth. Add cake or pudding
and process until smooth. Transfer to a freezer-proof bowl and freeze for 
30 minutes or until firm enough to scoop.

3.

Scoop banana ice-cream into cones, drizzle with caramel sauce, scatter with nuts, then serve immediately.
