A classic Eton mess

You can create the classic English dish of Eton mess in minutes by using a store-bought pavlova instead of homemade meringue. Layer it with whipped vanilla cream and berries and top with  fairy floss. Yum!

Set aside 1 cup frozen raspberries and allow to thaw, then roughly mash with a fork.

In the large bowl of an electric mixer, beat cream and vanilla until soft peaks form. Gently swirl mashed raspberries through (don’t overmix).

In 6 x 375ml capacity glasses, layer cream, torn pavlova, remaining raspberries and strawberries. Repeat layering and top with fairy floss. Serve.

Why do they call it Eton Mess?

This dessert has long been associated with Eton College, a private boys school in Berkshire, England. The story goes that Eton mess was served as dessert to the boys when they versed their rivals, Harrow College in cricket (who also have their own version called Harrow mess).

What is the difference between pavlova and Eton Mess?

A finished pavlova is topped with lots of cream and fresh fruits that are commonly found in Australia, including passionfruit and mango. An Eton mess, however, is more of a fruit fool than a topped meringue, and usually includes berries and cream throughout the dessert.

What does Eton Mess taste like?

Eton mess is a classic British dessert, and is a very sweet treat to end a meal. Often containing strawberry syrup and fresh berries, this dessert is sweet, fresh and extremely moreish.
