Ingredients
Method
In a bowl, mash eggs and mayonnaise together. Season to taste. Spread half bread slices with egg mixture.
Top each with an even amount of cucumber and watercress. Season to taste.
Butter remaining bread slices and sandwich together. Remove crusts. Cut each sandwich into three even fingers.
Arrange on a serving platter. Cover with plastic wrap and chill until ready to serve.
Chef’s tip
Traditionally, the sliced cucumber is placed in a colander, sprinkled lightly with salt and set aside for 20 minutes. Rinse well and pat dry on a paper towel.
