300g red cabbage, core removed, shredded
300g green cabbage, core removed, shredded
2 carrots, cut into matchsticks
1 green apple, cut thinly into rounds
2 sticks celery, cut into matchsticks
2 green shallots, thinly sliced on diagonal
½ red onion, very thinly sliced
¼ cup flat leaf parsley leaves
¼ cup dill sprigs
Coleslaw dressing (see recipe link, below)
Put cabbage, carrots, apple, shallot, onion and herbs onto a large platter.
Put dressing (click here for the recipe) into a serving jug or bottle and serve dressing on the side. Serve.
To add some crunch
Add a few handfuls of fried noodles, and/or toasted slithered almonds just before serving.
