Ingredients
⅓ cup lime juice
⅓ cup sweet chilli sauce
2 Tbsp fish sauce
½ small Chinese cabbage, finely shredded
¼ red cabbage, finely shredded
1 large carrot, shredded with a julienne peeler or cut into thin matchsticks
2 cups bean sprouts
200g snow peas, thinly sliced
4 shallots, very thinly sliced
2 cups mixed Asian herbs, such as coriander, Thai basil and mint
⅔ cup salted roasted peanuts, roughly chopped
⅔ cup fried shallots
Black sesame seeds, to sprinkle
Method

Whisk lime juice, sweet chilli and fish sauce in a large bowl.

Add shredded cabbages, carrot, bean sprouts, snow peas, shallots, half each of the herbs, peanuts and fried shallots to bowl and toss well to combine.

Sprinkle over remaining herbs, fried shallots and peanuts, and black sesame seeds. Serve.
