Ingredients
2 avocados
½ bunch coriander, leaves chopped, plus extra, to garnish
¼ bunch mint, leaves chopped
3 cloves garlic, minced
3cm piece ginger, grated Juice of 2 limes
2 Tbsp extra virgin olive oil
½ tsp ground cumin
Sea-salt flakes and freshly ground black pepper, to season
4 cups cooked brown rice, warmed
Shaved red onion, to garnish

Halve and deseed avocados. Scoop flesh into food processor. Add herbs, garlic, ginger, juice, oil, cumin. Process until smooth. Season.

Combine avocado mixture and rice. Top with onion and extra coriander. Serve.
