Ingredients
2 Tbsp extra virgin olive oil
1 brown onion, finely diced
4 cloves garlic, minced
4cm piece ginger, grated
2 Tbsp tomato paste
400g can diced tomatoes
400g can four bean mix
1 Tbsp Mexican spice mix
1 Tbsp brown sugar
Sea-salt flakes and freshly ground black pepper, to season
8 beef sausages
8 hot dog buns
2 cups grated tasty cheese
2 cups crushed corn chips
Guacamole, sour cream and hot sauce, to serve

Heat oil in a saucepan on medium and cook onion, celery, garlic and ginger for 5 minutes until softened. Add tomato paste, cook for 30 seconds, then mix in tomatoes, beans, Mexican spice mix and sugar. Simmer for 20 minutes, until thickened, then season.

Grill sausages on medium heat, turning regularly, until cooked through. Put into hot dog buns. Top with sauce, cheese, corn chips and a little more cheese, then arrange in an oven tray and bake for 3 minutes, until cheese is melted. Serve with guacamole, sour cream and hot sauce.
