Healthier apple berry crumble

Healthier apple berry crumble Andre Martin
Prep: 10 Minutes - Cook: 40 Minutes - Serves 4

Ingredients

4 Granny Smith apples (about 900g in total), peeled, cored

2 cups frozen mixed berries

2 Tbsp honey

Vanilla yoghurt, to serve

Crumble topping

²⁄³ cup quinoa flakes

¼ cup extra virgin olive oil

¼ cup brown sugar

¼ cup flaked almonds

¼ cup coconut flakes or coconut chips

1 tsp ground cinnamon

Cook's tips: Find quinoa flakes in the health food aisle of the supermarket or at health food stores. Serving in individual bowls helps you and your guests with portion control (no family-style dish tempting you to reach for seconds). Opt for deeper bowls – a smaller surface area means less crumble and more of the healthier fruit filling.

Method

  1. Preheat oven to 180°C. Cut apples into 2cm cubes and put in a small roasting pan or slice tin (about 30 x 20cm). Add berries and honey and toss to combine, then cover with foil. Put pan in a larger oven tray to catch any cooking juices. Bake for 20 minutes.

  2. To make crumble topping, combine all ingredients in a large bowl.

  3. Spoon hot fruit mixture into four ¾-cup capacity ovenproof dishes. Scatter crumble topping over fruit mixture and bake for 20 minutes or until crumble topping is golden and fruit is bubbling. Serve with yoghurt.
