Excited to be joining the team, Colin says the style of presenting is different from what he’s used to at MKR.
“It’s a bit more natural and more me. I cook with the food I cook for my family in my house. If anyone’s seen my Instagram or TokTok, it’s like that."
He adds: “My style is a lot more fun, family-friendly, and I would say economically good for people. I’ve got to the age where I just want to cook stuff I like and not mess around with making food too hard for people.”
The secret to a perfect bolognese
Sharing some kitchen wisdom, Colin says he swears by a rack of pork or a pork cutlet for his favourite mid-week meal. And if you want to improve your cooking game, Colin says learning how to braise is a must.
“Learn to braise a piece of brisket or a lamb neck. It’s a great way to get maximum flavour and results from a cheaper cut of meat,” he says.
While on the topic of classics, Colin says everyone should know how to make spaghetti Bolognese properly.
So what’s his secret? Mix half pork with half mince, throw in plenty of veggies, use good-quality passata, add a splash of milk (yes, you read that right – it's an Italian trick), and finish with bay leaves, thyme, and fresh herbs.
Colin’s favourite cooking hack
Lastly, Colin shares his favourite cooking hack. Forget just salt and pepper; Colin swears by the transformative power of lemon in a dish.
“[The acidity of the lemon and the zest] changes the entire dish," he explains.
“Even if you have a leg of lamb and put lemon over it. It's a very simple hack. A lemon costs minimal to buy, and you get maximum results.”
