Ingredients
2 cups self-raising flour
3/4 cup caster sugar
2 free-range eggs, lightly beaten
2/3 cup milk
1 tsp vanilla extract
125g unsalted butter, melted, cooled
3/4 cup brown sugar
2 Tbsp rolled oats
1 tsp ground cinnamon
2 medium very ripe banana, mashed (you'll need approx. 3/4 cup)
Banana chips, to serve
CRUMBLE
1/4 cup plain flour
2 Tbsp brown sugar
1/2 tsp ground cinnamon
30g unsalted butter, chilled, chopped
2 Tbsp rolled oats
HONEY ICING
250g cream cheese, softened
60g unsalted butter, softened
1/3 cup Wild Nectar Pure Australian Honey, plus extra, to drizzle

Preheat oven to 180°C fan-forced (200°C conventional). Line a 6-hole, 3/4-cup capacity Texas muffin pan with cases.

For Crumble, combine flour, sugar and cinnamon in a bowl. Rub in butter until mixture resembles coarse breadcrumbs. Stir in oats. Set aside.

Sift flour and brown sugar into a bowl, adding oats and cinnamon.

Whisk eggs, milk, vanilla, butter and banana in jug until combined.

Make a well in centre of flour mixture. Pour in butter mixture. Stir until just combined. Spoon batter evenly into cases. Sprinkle tops with crumble.

Bake for 25 minutes or until a skewer inserted into centre comes out clean. Cool completely on a wire rack.

For Icing, use electric beaters to beat all ingredients until smooth. Spoon mixture into piping bag fitted with a 1cm round nozzle. Pipe mixture onto muffins. Serve with banana chips and extra honey.
