Ingredients
1 tbsp olive oil
1 red onion, finely chopped
2 tsp ground cumin
2 tsp garam masala
500g lamb mince
200g green beans, sliced
½ cup chopped coriander
½ cup self-raising flour
½ cup milk
1 egg, whisked
oil for shallow frying
sweet potato fries, mixed salad, aioli, to serve
Method

In a frying pan, heat oil on high. Saute onion 2-3 mins. Add spices and cook 30 secs until fragrant.

Add mince, cook 4-5 mins until browned and cooked through. Transfer to a large bowl and cool slightly.

Add beans, coriander, flour and combined milk and egg to mince mixture. Season. Set aside 10 mins.

In a frying pan, heat oil on high until a little mixture sizzles when added. Drop heaped spoonfuls of mixture into pan in 3 batches, fl attening slightly to form fritters. Cook 2 mins each side until golden. Drain on paper towel. Repeat to make 8 patties.

Serve fritters with sweet potato fries, green salad and aioli.
