Ingredients
• 1/4 cup Cobram Estate Garlic Infused Australian Extra Virgin Olive OIl
• 1/4 cup oyster sauce
• 1 tbsp light soy sauce
• 1cm piece of finely grated ginger
• 4 star anise
• 10 chicken drumsticks
• 1 red onion
• 1 long red chilli
• 2 green shallots
• 3 cups white rice (or preferred), to steam
• handful snow peas
Method

Preheat oven to 180 degrees celcius. Add olive oil, oyster sauce, light soy sauce, ginger and star anise in a large roasting pan.

Add chicken drumsticks and the red onion, cut into thin wedges. Toss to coat.

Roast for 20 minutes. Remove from oven and baste chicken with pan juices. Increase heat to 250°C, and cook for a further 5 minutes or until chicken is golden and cooked through.

Scatter with 1⁄2 thinly sliced long red chilli and sliced green shallots. Serve with steamed rice and snow peas.
