Mudcake puddings recipe
Prep: 20 minutes, Makes 24
600g store-bought chocolate mudcake
½ x 290g bag white chocolate melts
24 red M&M’s
Icing sugar, to dust
Crumble mud cake and icing into a bowl, roughly break up using a wooden spoon, then use clean hands to mix and combine (making sure you break up the pieces white chocolate icing drizzle).
Using slightly damp hands, roll tablespoonfuls of mixture into rounds and arrange on a tray lined with baking paper. Chill for 15 minutes.
Melt white chocolate in a small bowl in a microwave on MEDIUM (50%) power in 30 second bursts until melted and smooth. Thinly slice each spearmint leaf into 9 small pieces.
Working with one ball at a time, use a teaspoon to drizzle a little melted white chocolate on top of mud cake ball. While chocolate is still wet, press in two spearmint lolly pieces to form leaves and place red M&M in middle of leaf to form holly. Continue with remaining mud cake balls, melted chocolate, leaves and M&M’s.
Chill 15 mins to firm, then serve dusted with icing sugar.
White chocolate melts set quite quickly, so it’s important to decorate one ball at a time so the chocolate is still wet when you press the leaves and M&M into it.
You could also use mini red M&M’s instead of normal size M&M’s as well.
