Preparation time: 10 mins plus 30 mins cooling

½ cup caster sugar
4 cups roughly chopped seedless watermelon
Juice of 2 limes
4 shots Aperol (see Cook’s tip, below)
4 cups crushed ice
Mint sprigs, to garnish
Watermelon pops with mint sugar, to serve (see recipe, opposite)
Step 1 Put sugar and 125ml water in a small saucepan over a medium heat. Bring to the boil and cook until sugar has dissolved. Remove syrup from heat and set aside to cool completely.
Step 2 Pour ¼ cup of the syrup into the jug of a blender. Reserve remaining for another use. Add watermelon, lime juice and Aperol then puree until smooth. Add ice and puree again. Pour into a large serving jug. Garnish with mint sprigs and serve with watermelon pops.
Cook's tip: Aperol is an Italian aperitif made of bitter orange plus a mix of herbs and roots. It’s similar to Campari but sweeter in taste.
