1kg pork mince
114g can of Massaman curry paste
400ml coconut milk
2 carrots, roughly chopped into 1cm pieces
2 green shallots, sliced into 2cm-long pieces, plus extra to serve
2 kaffir lime leaves, scrunched to release flavours
OPTIONAL SERVING SUGGESTIONS
Cooked egg noodles or steamed jasmine rice
Thai basil leaves
Roasted salt peanuts
Put all ingredients into the bowl of a 5.7L slow cooker.
Stir to roughly mix together.
Place bowl in appliance.
Cover with lid.
Cook on the low setting for 8 hours.
Remove bowl from appliance, remove lid and use a wooden spoon to break mince apart. Serve as is with extra shallots and with optional serving suggestions, if using.
