Scrambled eggs with avocado, spinach and basil pesto
Eggs don’t have to be just for breakfast. Try this combo for a satisfyingly simple weeknight dinner.
Ingredients
• Perfect Scrambled Eggs
• 8 slices thick-cut bread, toasted, buttered
• 100g baby spinach leaves
• 2 ripe avocados, thinly sliced
• 1/2 cup basil pesto

Top toast with a layer of spinach, then spoon over scrambled eggs. Arrange avocado on top, then spoon over a dollop of pesto and serve.
