Ingredients
60g (6 cups) baby spinach leaves
2 light tortillas
60g low-fat fresh ricotta
40g 99% fat-free semi-dried tomatoes, chopped
Freshly ground black pepper, to season
Method

Wash spinach leaves and put in a shallow microwave dish. Cover and cook on high/100% for 1-2 minutes or until spinach leaves just wilt.

Spread tortillas with ricotta. Top each with spinach and tomato. Season with pepper. Roll up wraps and cut in half to serve.
