When Fast Ed has ingredients as fresh and delicious as strawberries from the Sunshine Coast, he finds it hard not to just eat them raw. But we’re not here to watch Ed eat fruit; he’s making a simple tart with a variety of nuts and dates.
While it’s easy to make, you’ll need to make sure you have some sharp knives for all the chopping involved, but you’ll soon have a celebration of southeast Queensland strawberries!Â
Note: this recipe requires 1 hour chilling time.

Method
Chop nuts roughly, then combine with seeds, fruit and spices in a bowl. Knead by hand until mixture begins to stick, then add coconut oil and mix again. Press into a 22cm tart tin, then chill until set.
Combine cottage cheese, rosemary, zest and syrup in a bowl and mix until smooth. Spread over tart base, top with strawberries and drizzle with extra maple syrup. Serve.
