Ingredients
1 cup black glutinous rice
2 1/2 cups water
1 cup coconut milk
1 tsp fine salt
1 pandan leaf (optional)
1/4 cup dark palm sugar
Juice of 1 lime
1/4 cup thick coconut cream
Lime slices, to serve
Papaya wedges, to serve
Rambutans, to serve (optional)
Method

Wash rice under running water until water runs clear.

Put rice, water, coconut milk, salt and tied pandan leaf, if using, in a medium saucepan over a medium heat. Cook, stirring occasionally, for 45 minutes or until rice is just tender. If rice becomes dry, add a little more water.

Stir in palm sugar and lime juice. Set aside for 3 minutes. Remove pandan leaf. Spoon into glasses. Top each with coconut cream and lime. Serve with papaya and rambutans, if using.
