Banana, oat and honey muffins

Bananas, honey and oats are the perfect combination for a yummy muffin recipe. With simple ingredients and straightforward instructions, these irresistible muffins are ready in no time.

Method

1.

Preheat oven to 180°C fan-forced (200°C conventional). Line a 6-hole, 3/4-cup capacity Texas muffin pan with cases.

For Crumble, combine flour, sugar and cinnamon in a bowl. Rub in butter until mixture resembles coarse breadcrumbs. Stir in oats. Set aside.

Sift flour and brown sugar into a bowl, adding oats and cinnamon.

Whisk eggs, milk, vanilla,  butter and banana in jug until combined.

Make a well in centre of flour mixture. Pour in butter mixture. Stir until just combined. Spoon batter evenly into cases. Sprinkle tops with crumble.

Bake for 25 minutes or until a skewer inserted into centre comes out clean. Cool completely on a wire rack.

For Icing, use electric beaters to beat all ingredients until smooth. Spoon mixture into piping bag fitted with a 1cm round nozzle. Pipe mixture onto muffins. Serve with banana chips and extra honey.

Essential kitchen items needed for this recipe

  • Mixing bowls: You’ll need bowls for mixing the muffin batter and the crumble topping. Having a few different sizes helps separate dry and wet ingredients.
  • Texas muffin pan: You’ll need a Texas muffin pan with six holes, each with a 3/4 cup capacity. Make sure to line the pan with muffin cases to prevent sticking.
  • Electric beaters or stand mixers: You’ll need either electric beaters or a stand mixer to prepare the honey icing until smooth and creamy.
  • Piping bag with nozzle: A piping bag fitted with a 1cm round nozzle is essential for neatly applying the honey icing onto the muffins.
