Preheat oven to 180°C fan-forced (200°C conventional). Line a 6-hole, 3/4-cup capacity Texas muffin pan with cases.Â
For Crumble, combine flour, sugar and cinnamon in a bowl. Rub in butter until mixture resembles coarse breadcrumbs. Stir in oats. Set aside.Â
Sift flour and brown sugar into a bowl, adding oats and cinnamon.
Whisk eggs, milk, vanilla, butter and banana in jug until combined.
Make a well in centre of flour mixture. Pour in butter mixture. Stir until just combined. Spoon batter evenly into cases. Sprinkle tops with crumble.Â
Bake for 25 minutes or until a skewer inserted into centre comes out clean. Cool completely on a wire rack.
For Icing, use electric beaters to beat all ingredients until smooth. Spoon mixture into piping bag fitted with a 1cm round nozzle. Pipe mixture onto muffins. Serve with banana chips and extra honey.
