Apricot-coconut balls

These tasty no-cook snacks are perfect for the kids’ lunch boxes – and don’t forget to sneak a few in yours, too.

Ingredients

Method

1.

Put apricot, 1/2 of the coconut, milk powder and oat bran in a food processor and pulse until smooth. Add boiling water and pulse until pureed.

2.

Using damp hands, divide mixture into 24 balls. Roll balls in remaining coconut and serve.
