Ingredients
Base mix
•3 cups self-raising flour
• 11⁄2 tsp baking powder
• 1⁄2 tsp fine salt
• 1⁄2 cup brown sugar
• 2 free-range eggs
• 1 cup buttermilk
• 2⁄3 cup vegetable oil
• 1 tsp vanilla extract
Banana and coconut
• 1 cup mashed banana
• 3⁄4 cup coconut flakes
• 1⁄2 cup caster sugar
• 11⁄2 tsp mixed spice
• Banana chips and coconut flakes, to garnish
Very berry
• 1 cup mixed frozen berries
• 3⁄4 cup diced peaches
• 1⁄2 cup caster sugar
• 1 tsp ground cinnamon
• 1⁄2 tsp ground ginger
Bacon and leek
• 4 rashers rindless shortcut bacon, diced, pan-fried until light golden
• 1⁄2 leek, thinly sliced, pan-fried until soft
• 3⁄4 cup coarsely grated cheddar
• 2 Tbsp chopped at-leaf parsley
• 2 tsp mixed dried herbs
Salami, tomato and feta
• 1⁄2 cup diced salami
• 1⁄2 cup diced semi-dried tomatoes
• 3⁄4 cup crumbled feta
• 11⁄2 tsp Greek seasoning

Sweet:
• 1 cup fruit
• 3⁄4 cup seeds (such as poppy) or dried fruit
• 1⁄2 cup caster sugar
• 11⁄2 tsp spices, like cinnamon and nutmeg
Savoury:
• 1 cup combined smallgoods and vegetables
• 3⁄4 cup grated or crumbled cheese
• 11⁄2 tsp spice/herbs
Method

Preheat oven to 180°C. Line a 12 hole 1⁄2-cup capacity muffin tin with paper cases or squares of baking paper. Sift flour and baking powder into a large bowl. Add salt. In a separate bowl, whisk sugar, eggs, buttermilk, oil and vanilla until smooth. Pour into flour mixture, mixing to combine.

Fold in your choice of flavour. Use 1 of the suggested combinations or invent your own variations. Spoon into muffin tin so each paper case is 3⁄4 full, adding garnish (if applicable to your flavour). Bake for 20 minutes or until just firm to touch. Cool on a wire rack, then serve.
