Method

Add all ingredients except sparkling wine to a cocktail shaker.
2.
Add ice and shake to combine.
3.
Strain liquid into glassware.
4.
Top up with a good quality sparkling wine.
5.
Garnish with a pineapple leaf.
Notes:
Freshly pressed pineapple juice works best. For organic maple, a good quality maple syrup will work perfect.
