Transform a basic packet mix into a deliciously simple bake ideal for dessert, afternoon tea or anything in between!
Add glam caramelised apples to bring a fresh zing.
Note: in addition to the 20 minutes preparation time listed above, you will also need to set aside 2 hours for cooling.

Preheat oven to 160°C fan- forced (180°C conventional). Grease a 20 x 30cm lamington pan. Line base and sides with baking paper, extending paper 2cm above pan edges.
Combine cake mix, coconut and butter in a bowl. Spoon over base of prepared pan, pressing with back of spoon to level. Bake for 15 minutes, or until golden. Cool for 5 minutes.
Pat apple dry with paper towel. Arrange over base. Whisk sour cream, eggs and vanilla together, then pour over apple. Bake for 20 minutes, or until topping is almost set (mixture will wobble slightly). Set aside for 2 hours to cool completely at room temperature.
To make Caramelised apples, melt butter in a large frying pan on medium heat. Add sliced apple and sugar, and cook, tossing gently, for 3-4 minutes, until golden all over and just tender. Transfer to a plate.
Cut 1cm-wide strips of baking paper. Arrange paper over top of slice to form diagonal lines. Dust liberally with cinnamon sugar. Carefully remove paper. Serve slice topped with caramelised apples.
Can you freeze apple and sour cream slice?Â
Unfortunately, this is one slice that does not freeze well. Apple and sour cream slice will keep in the fridge for up to three days, but will get soggy if put in the freezer.Â

You can use any type of apple you like to make apple and sour cream slice. In this recipe, we use canned apple slices so it’s easy to make!
